Ri's Granola

Ingredients
4 cups of Oats - Pam's Rolled Oats
1.5 cups of roughly chopped nuts - I used cashews and almonds
1 cup of Desiccated coconut - Pam's
2 cups of Smooth Peanut Butter - Pam's
1/4 cup of Sugar Free Maple - Queen's
1-2 TBS honey - This will help bind all the ingredients well
Optional: dried fruit of choice
Method
Preheat oven at 200 degrees Celsius.
In a heat proof bowl, add PB, SF maple and honey. Place in the microwave for 30-40 secs. Mix until well combined.
Add the oats and coconut first, mix well.
Then add the nuts, mix until well combined.
Pour onto a lined baking tray and bake for 13-15minutes or until golden brown.
Let it cool completely, then place in an air-tight container and keep in a dry cool area.
Enjoy for brekky, as a yoghurt topper or in your next crumble mix!
Hot tips!
Don't bother using the flash or expenny branded oats - stick with homebrands for this one. Firmer oats bake better!
Bake the granola in batches and shake half way through to ensure it browns evenly.
Better served the day after - once it firms up!
