Light & fluffy Lemon & Bluub muffins

Serves: 10 large / 12 med
Ingredients
Dry
200g self raising flour
50g vanilla protein powder - always NZ Protein
1 tsp baking soda
1/4 C sweetener
Wet
1 egg
115g neutral oil
115g lite blue top milk
100g lite sour cream*
100g plain unsweetened Greek yoghurt*
Juice and zest of 2 med lemons - I like things on the lemony side
2 C fresh or frozen blueberries - cover these in flour
Method
Preheat oven at 200 degrees Celsius.
In a large mixing bowl, prepare the dry ingredients.
In a separate bowl, mix wet ingredients.
Once wet ingredients are well combined, add to dry ingredients.
Mix until almost well-combined, add blueberries and then gently mix. Do not mix.
Spoon into your lined muffin tray - I used a 6 count XL tray.
Top with extra bluubs and lemon zest.
Bake on 180 for 15minutes.
Dust with icing sugar or whip up your fav frosting, and enjoy!
Hot tips!
*Can use 200g of sour cream or Greek yoghurt for ease.
For a better bake (greater rise), only fill half the muffin tray.
