5 simple chicken marinades

Greek lemon chicken
¼ c olive oil
1 tsp dijon mustard
½ lemon - juice
2 cloves of garlic - minced
Spices: 1 tsp oregano, thyme, salt, pepper
Lime & Coriander
¼ c olive oil
Handful of coriander - picked off the stems and finally chopped
2 limes - juice
2 cloves of garlic - minced
Spices: 1 tsp cumin, chilli powder, salt, pepper
Honey mustard
¼ c olive oil
1 TBS dijon mustard
1 TBS apple cider vinegar
1 tsp honey
1 garlic clove - minced
Spices: 1 tsp salt and pepper
Teriyaki
¼ salt-reduced soy sauce
1 tsp dark soy sauce - if you don’t have this, you can leave it out
1 tsp sesame oil
1 tsp mirin or rice vinegar
1 garlic glove - minced
1 thumb-sized portion of fresh and peeled ginger or 1 TBS pre-minced ginger - minced/grated.
Two full stems of green onion - thinly sliced.
Mexican - you can use this for tacos, fajitas or even burritos

1 lime - juice
1 garlic clove - minced
Spices: 1 tsp cumin, paprika, chili powder, salt, pepper
Method
These marinades have been portioned to marinate 2-3 medium-sized chicken breasts. All you need to do is mix all the ingredients together and marinate your chicken in it - it shouldn't take any longer than 10mins. Aim to marinate your chicken for at least 2 hours, but overnight is best!
