Crunchy chickpea & corn salad

Ingredients
1 x can of tinned chickpeas - drained and rinsed
1 x can of tinned corn kernels - drained and rinsed
1/2 a medium cucumber - diced
1/2 of any coloured capsicum - diced. I used yellow because it's sweeter!
100g of Feta cheese - diced
Dressing
1 TBS olive oil
1 tsp lemon juice
1/4 tsp dijon mustard - can sub this with normal mustard
1/2 tsp of salt & pepper
1/2 tsp of Raptor Naturals Blazing Tex-Mex herb and spice rub - can omit but I wanted something a bit spicy!
Method
Add all your salad ingredients into a serving dish.
Shake up the dressing ingredients in a jar until well combined.
Pour dressing over salad and mix well.
Enjoy as a nutritious side salad!
